Summer Food and Custom of Korea

Pyongyang, August 7 (KCNA) -- Restaurants in the DPRK are serving various kinds of dishes with national flavor to customers in the mid-summer days. From olden times the Korean people have made various kinds of dishes which help overcome heat and strengthen spirits to use them in their dietary life. Famous among articles of summer food are cold noodle, green gram jelly and chopped noodles and green gram jelly mixed with soybean or sesame soups. It is a time-honored food custom of the nation to take tangogi soup and young chicken broth with insam in the hottest period of summer. The pepper-pot chopped beef soup is also one of the summer dishes. People in some areas used to eat rice-gruel prepared with red-bean mashed and strained or rice-gruel mixed with fish. Slices of raw carp, snakehead, gray mullet, squid, cuttlefish and octopus are nourishing food for summer. Eel and rainbow trout roasted with seasonings and those boiled dry are also popular. A historical record says that eating dishes made with eel on July 7 (the 11th of the 24 seasonal divisions) is equivalent to taking insam. Besides, there are beverages made with melon and water melon and dishes made with green pumpkin, cucumber, unripe pepper, unripe garlic and others. |
