Lecithin was found to be a major subsidiary nutrient in recent years. This substance had been known to be contained only in the yolk of egg or animal's brain.

After scores of experiments, researchers of the Center invented a method of extracting lecithin from beans, putting its production on a scientific basis.

The bean lecithin is applicable to foodstuff and chemical industries as nutrient, emulsifier and antioxidant, according to Ri Ok Se, an 82-year-old researcher of the Center.
