Ryugyong Kimchi Factory
Pyongyang, April 2 (KCNA) -- Kimchi, one of the world's five health foods, is an important subsidiary food indispensable to the Korean people's diet.

The number of factories producing kimchi in an industrial way is now on the increase in the DPRK.

Among them is the Ryugyong Kimchi Factory located on the outskirts of Pyongyang. It has put the production of kimchi on a highly industrial and scientific basis. Its products like the whole cabbage kimchi, white kimchi, sliced radish kimchi and nutritive kimchi for children are very popular among the consumers.

Paek Mi Hye, manager of the factory, told KCNA:

The factory has recently further improved the quality of products through a technical innovation drive.

On the basis of properly constituting the mixing proportion of lactobacilli, it newly cultivated 10 kinds of lactobacilli in an industrial way and completely removed various germs. And it improved the taste and aroma of kimchi by completing a pickling method in low temperature and less salt to keep the freshness and nutritive substances of vegetables and radishes.

Now the factory is conducting a research for making kimchi with mallow, chives and other nutritive vegetables.
